Who are we?

The Bread Factory is a Food Manufacturing bakery that makes deliciously crafted bread, cakes, and pastries. We are proud to craft products for top UK restaurants, neighborhood grocery stores, and our own GAILs bakeries.


As our teams grow, we are on the lookout for our next Process Technologist to join our team in based in Hendon.


Every day is different at The Bread Factory, but here are some of the things you will be doing:


  • You will work with production teams to carry out production trials making sure that that trials are documented in a trial report.
  • The trial report needs to capture the detail of the trial such as recipe, line settings, adjustments made through trial if any, spec data where applicable and any other relevant process information.
  • You will collect samples from production trials to generate a Quality Attribute Standard that is agreed with customer, production and technical.
  • You will be part of the team that will commission any new equipment acquired to ensure there is a smooth transition from previous production process / technique to the new.
  • Collect objective product measurement from the trials e.g. dimensions, aw, pH and any other relevant measures identified.
  • Where applicable ensure that trials are carried out into finished packaging to allow packaging to be evaluated.
  • Ensure accurate & up to date house-keeping of all production trial and process documentation / record keeping status of the project
  • Attend first production runs to support the production team and where necessary provide ongoing support to address any ongoing issues.
  • Support production and troubleshooting any issues in manufacturing.
  • Develops process specifications for the site’s product range in line with the plants actual capability and completed for all product changes and launches.
  • From samples collected from production trials generate a Quality attribute Standard that is agreed with customer, production and technical.
  • Provide accurate recipe costing.
  • Identifying any potential continuous improvement initiatives that arise, testing product differences with new ingredients or process to ensure quality is maintained.
  • As part of continuous improvement work in collaboration with key stakeholders to develop and adapt existing recipes to maintain or improve taste, texture, quality and cost.
  • Arranging ingredients/products to be made for tastings and approval. This includes producing samples of existing products that may be linked to shortages of ingredients.
  • Set up recipes with photos to ensure products are ready for hand over to production.

  • You will be an absolute foodie, with a passion for bread and bakery products with experience of launching commercially viable products.
  • Several years in a food environment role is preferred.
  • Bakery related qualification desirable.
  • The skills to translate test bakery recipes to scale up for factory processes.
  • Developing and maintaining in-depth knowledge and understanding of the sites' manufacturing capabilities, systems, and processing parameters.
  • Developing strong working relationships with colleagues across the business to ensure trials are organised effectively and products are launched on time and in line with business objectives and customers' expectations.
  • Excellent communication skills including being able to impart information.
  • A passion for food and a good understanding of the current markets and trends.
  • Highly organised with a great attention to detail.
  • Time management skills and able to work to tight deadlines.
  • Good numeracy and computer skills.
  • An understanding of product and nutrition.
  • Creative and innovative thinking.
  • Ability to work on own with minimal supervision and use sound judgment.
  • The ability to encourage and motivate people.
  • Troubleshooting skills.
